Celery. A common vegetable but to be honest, it is not very tasty eaten raw by itself. How many people on diets have summarized their misery as "munching on celery"... Yet celery is a great source of fibre as well as calcium and at a mere 14kcal per 100g you really can't argue with the celery's status as diet food.
Celery is actually quite an all-round vegetable, did you know that the leaves can also be eaten and are quite tasty?
How to make salad using celery
Mix one cup of finely cut celery together with its chopped leaves, a cup of finely cut apples and a cup of finely cut pears. Prepare a light lemon based vinaigrette based on our basic recipe.
Lightly stir-fry the celery root together with some red onions. Mix into the salad, add a bit of salt and pepper, sprinkle a bunch of croutons on top and here you go: an uncomplicated, tasty salad based on celery!
