“Classic” Caesar dressing
Caesar salad is probably the most common salad there is and served all over the world. Why the popularity? Nobody knows. There is lots of discussion as to what constitutes the proper and most traditional way to prepare the dressing.
Try this. Stir together:
one raw egg yolk, some Dijon mustard, 1 mashed up garlic glove, 1 very finely cut anchovy fillet (from the can), a dash of Worcestershire sauce, Tabasco, freshly ground black pepper, 6 parts olive oil, 1 part red wine vinegar & 1 part white balsamic vinegar. Stir until the result is a smooth dressing.
Is it really the classic Caesar dressing? Nobody knows.
