Thousand Island Dressing
Thousand Island Dressing is a very popular dressing, but be careful: it is very rich in calories and flavor, so it should not be combined with very light flavored salads. If you use it for normal green lettuce, the only thing you will taste is the dressing.
Still, it makes a nice dip or dressing for very hearty salads.
I believe using low fat ingredients makes the dressing taste lighter and fresher.
1/2 c. lower fat mayonnaise
1/2 c. plain low fat yogurt
1/4 c. sweet chili sauce
1 tbsp. minced fresh onion
1-2 tbsp. finely chopped celery
Pepper, salt and lemon juice to taste
Stir together well and voilà. Now the basic sauce is done, but for more adventurous people this is where the real fun begins:
How about adding in some coarsely chopped black olives? Stirring in freshly chopped dill makes the dressing much more flavorful and quite compatible to strong flavored fish dishes (for example roasted mackerel). Putting in lots of chives and parsley will result in a nice dip for oven-baked or stir-fried potatoes.
